Puerto Rican Pollo al horno
This weekend I was craving pollo al horno or baked chicken… Puerto Rican style, so I made it happen. Here’s my family’s recipe in case you want to make it too!
Ingredients:
1 lemon
1/2 orange
3 tbsp of vinegar
2 tbsp of olive oil
6 garlic cloves, minced
1tsp of salt (per pound, so 5 pound bird = 5 tsp)
1 tbsp of oregano
1 tbsp of dried parsley
1 tsp of pepper
1 tsp of garlic powder
1 tsp of onion powder
Turmeric by sight (for color and benefits)
Steps:
Clean chicken with cold water and dry it with paper towels
Stab up the chicken creating little holes all over and pour vinegar, lemon, and orange juice. Rub all over chicken (both sides).
Pour olive oil and fresh minced garlic, pushing the garlic into the little holes you stabbed.
Combine herbs and spices in bowl or pilón (except turmeric) and pour this all over bird rubbing it everywhere.
Pour turmeric by sight to add color. Rub it in.
Place in refrigerator to marinate over night.
Bake at 350 degrees for 1.5 hours flipping the bird midway. Cover it with aluminum foil.
After it’s baked for 1.5 hours, set your oven to broil on low for 5-10 minutes to crisp up the skin.
